Xanthan Gum
Xanthan gum is a natural food additive commonly used as a thickening and stabilising agent in both cooking and baking. It is particularly useful in gluten-free baking, where it helps to replicate the structure and texture that gluten provides in traditional recipes.
Derived from the fermentation of sugar by a specific type of bacteria, xanthan gum is a fine, white powder with no noticeable taste or smell. When added to liquid, it forms a gel-like consistency, helping to bind ingredients together and prevent them from separating.

Directions for Use:
Xanthan gum is highly effective, so only a small amount is needed:

For baking, use around 1/2 teaspoon per 250g of flour in cakes, or 1 teaspoon per 250g of flour in bread recipes.

For thickening liquids, start with 1/4 teaspoon and gradually increase as needed, whisking thoroughly to avoid clumping.
Store in a cool, dry place in a tightly sealed container to maintain freshness.
