Overview
A concentrate designed to make traditional Italian-style bread like Ciabatta, Panini and Focaccia. The concentrate is used at 10% on flour weight.
An off white, free flowing powder that has a neutral aroma.

Ingredients
- Cake flour 25kg
- 15% Extra Soft Premix 3.75kg
- Yeast 1.25kg
- Water 15L
Total Batter Weight: 45kg
Method
- Place all ingredients into the mixing bowl.
- Mixing time depends on type of mixer used.
- Dough temperature 28ºC - 30ºC.
- Floor time 10 minutes.
- Scale as required.
- First proof 10 minutes.
- Mould as required.
- Final proof ±40 minutes.
- Bake at ±230ºC.
