Overview

A concentrate designed to make traditional Italian-style bread like Ciabatta, Panini and Focaccia. The concentrate is used at 10% on flour weight.

An off white, free flowing powder that has a neutral aroma.

Recipe

Ingredients
  • Cake flour 25kg
  • 15% Extra Soft Premix 3.75kg
  • Yeast 1.25kg
  • Water 15L

Total Batter Weight: 45kg

Method

  • Place all ingredients into the mixing bowl.
  • Mixing time depends on type of mixer used.
  • Dough temperature 28ºC - 30ºC.
  • Floor time 10 minutes.
  • Scale as required.
  • First proof 10 minutes.
  • Mould as required.
  • Final proof ±40 minutes.
  • Bake at ±230ºC.
